The Wine Came First

So many food and wine pairing guides focus on selecting the dish first and then the wine.  

I believe that just about any wine can be made to go with any dish by just changing the recipe to complement the wine.   

Choose the wine first and then choose the dish. There are so many different sauces and seasonings, the journey is fun.  

2010 is my year to really dig into sauces and wines. 

As I post some information about sauces, I am hoping that everyone will add to this blog thread sauces that they enjoy and allow each of us to develop variations on those themes.
